Santa Barbara

This coffee was produced on Santa Barbara mountain, near Yojoa Lake (the only lake in Honduras). The Lake Yojoa is an impressive natural reservoir of water of volcanic origin and has an incredible diversity of aquatic animals. Also, 50% of the bird species of Honduras are found here.

The Santa Barbara mountain was declared a National Park in 1987 and has an altitude of 2774 masl which makes it the second-highest mountain in Honduras; It has an extensive virgin cloudy forest rich in diversity of flora and animal species and exotic birds, here people can do bird watching for speciaes such as the Quetzal and Colibrí Esmeralda.

The farms are located between these two places allowing for a special microclimate for the coffee plants. This also ensures a very consistent cup profile year by year. Right here, in the high part of the Santa Barbara mountain, the most famous Honduran specialty coffee is cultivated, including winners of the Cup of Excellence.

In the Cup

This coffee is a delicate sweet cup with some lovely traditional gesha qualities. When hot, the aromatics remind us of sweet iced tea with a honey-like quality. On first sip, there is a bright citrus note reminiscent of clementine oranges with a rich sweet peach sweetness. The stonefruit notes are complimented by a delicate lingering chamomile finish. As it cools, the mouthfeel becomes juicier and the coffee gains a white tea quality. The acidity becomes brighter and more orangey while still maintaining a honey sweetness. Overall this coffee is a perfect coffee to enjoy in the lengthening days and summery warmth.
